Background and motivation for starting a blog on Japanese fermented foods:Before I started incorporating Japanese fermented foods into my diet, I mainly ate Western-style foods. Although I had never been seriously ill, I had been suffering from constipation since childhood. As a result, I experienced bloating, fatigue, irritability, and other mild symptoms that persisted for many years. Eventually, my constipation became severe, and I had to undergo surgery to improve my quality of life. After this experience, I became interested in gut health and learned about the potential benefits of Japanese fermented foods. I started by switching from bread-based breakfasts to traditional Japanese breakfasts and incorporating homemade nuka-zuke (rice bran pickles) into my diet. Gradually, my constipation improved, and now, two years later, I feel healthier than I did when I was younger. Improved physical health has led to a greater sense of emotional stability, and I feel a small but consistent sense of happiness every day.
I believe that many people around the world experience mild physical and mental discomfort without developing serious illnesses. Therefore, I would like to share my experience with Japanese fermented foods and their potential benefits with as many people as possible. If even one person can improve their health before becoming seriously ill and live their ideal life, I would be more than happy.
